With dishes crafted to elevate the dining experience and honour the rich history of the British roast, this menu is more than a meal; it’s a culinary journey. We sat down with Chef Lee to discuss the inspiration behind the changes, the art of perfecting a roast, and what diners can expect from this exciting new chapter in Sunday dining.
For me, a Sunday Roast is all about comfort, tradition, and togetherness. But I wanted to take it beyond the usual expectations. By adding dishes like the Roast Stuffed Turkey Crown and the Beef Cheek, Bone Marrow & Truffle Spring Roll, I aimed to bring a fresh, indulgent take on the classics while still honouring their roots. I wanted to craft a menu that felt both familiar and elevated.
The previous menu was focused on traditional offerings, which were great, but I felt it could do more to surprise and delight our guests.
The new menu introduces seasonal and festive elements, like Brussels Sprouts and Pigs in Blankets, alongside reimagined dishes such as the Pan-Roasted Cauliflower Steak. These additions give diners more variety while keeping the heart of the Sunday Roast intact.
It’s all about the details—selecting the best ingredients, using techniques that highlight their natural flavours, and pairing them with complementary elements.
For example, the Beef Cheek Spring Roll isn’t just a starter; it’s a burst of umami with the richness of bone marrow and the subtle earthiness of truffle. Every dish is designed to have its own identity while fitting cohesively into the overall dining experience.
I want diners to leave feeling that they’ve experienced something truly special. The Sunday Roast is a tradition steeped in history, but that doesn’t mean it can’t evolve. With this menu, I hope guests feel the care and thought that has gone into every dish and leave with memories of a meal that’s not just satisfying but also a little surprising.
