We’ve expanded our culinary offering with five distinctive new additions – including starters, mains, and even our new Bucky Bordelaise – bringing innovative flavours and textures that enhance the signature dining experience at The Merchant Steakhouse.
Alongside these debut dishes, we’ve given fresh attention to some of our most celebrated plates, refining and elevating them even further. Together, these carefully curated creations offer both comfort and discovery, all delivered with the skill, precision, and excellence you’ve come to expect.
A two-seafood starter combining tender monkfish scampi and a caramelised scallop, elevated by kimchi, kombu butter and gochujang-glazed pak choi. It’s a symphony of oceanic textures with subtle umami heat—showcasing seafood with smoke and spice.
These short ribs arrive dripping in honey, striking an indulgent balance of sweet, savoury and sticky heat—served with crisp, tangy Bucky slaw. A bold, flavour-packed opener with Glasgow swagger.
New to mains: harissa-spiced monkfish paired with king prawns, served over orzo and a pea & watercress velouté. This dish layers Mediterranean warmth and seasonal green notes for a hearty yet refined seafood plate.
A new twist on poultry: tandoori-marinated chicken supreme arrives with Bombay potato fondant, cooling cucumber raita and tangy pickle. It brings vibrant, spice-driven flavours and comforting textures to the steakhouse setting.
A brand-new saucing option for our dry-aged steaks: Bucky Bordelaise. Rich and velvety, this sauce joins our roster alongside classics like peppercorn and chimichurri—providing a deep, wine-forward accent with every cut.
