Every dish begins with premium Scottish produce, from grass-fed beef dry-aged for up to 80 days to the freshest seafood and seasonal vegetables, all treated with the respect they deserve.

Our signature Beef Wellington captures that spirit perfectly — a 24-hour labour of love that wraps prime fillet in delicate mushroom duxelles and golden pastry. The Harissa-Spiced Monkfish and King Prawn Orzo tells the same story in a different way, blending classic technique with bold flavour and a touch of heat. These dishes, like everything on our menu, are built on patience, precision, and pride in doing things properly.

Dry-ageing is where patience becomes flavour. At The Merchant Steakhouse, we age our chateaubriands, tomahawks, porterhouses and rib-eyes for up to 80 days in carefully controlled conditions. All of our cuts go through the Dry-Ageing process to maximise tenderness and flavour.

This time-honoured process concentrates flavour, enhances tenderness, and creates the nutty, umami depth that defines a truly great steak. It’s not just a method—it’s the secret to the remarkable taste and texture that sets our cuts apart.
