Daryl Knox is our operations manager at The Merchant Steakhouse. In this post, Daryl will share our vision for The Merchant Steakhouse, and the progress we have made since launching in May this year.

What excites you about The Merchant Steakhouse?

Daryl: I love everything about my role at The Merchant Steakhouse. 

 

However, above all, there is no greater satisfaction than creating an incredible dining experience for our guests. I believe that dining is more than just the food and drinks on offer, although they are important. 

 

The difference between a good restaurant and an exceptional restaurant is attention to detail. The details matter: from the temperature of your wine, to the choice and volume of the background music, to the warm welcome you receive upon entering the restaurant.

What is the secret to great service at a restaurant?

Daryl: At The Merchant Steakhouse, our servers are trained to anticipate your needs, as opposed to only responding to your requests.

 

Whilst our team are always happy to cater to any concerns you have during your visit, we believe in going beyond mere responsiveness. Our approach is rooted in anticipation, ensuring that your dining experience surpasses expectations from the moment you step through our doors.

The Merchant Steakhouse is known for its exceptional quality of meat. How do you ensure that every cut served is of the highest standard?

Daryl: It’s all about the sourcing. We have established relationships with trusted local suppliers who share our commitment to quality. We meticulously select each cut to meet our standards, ensuring that every steak on our menu is a testament to excellence. Additionally, our kitchen staff undergo rigorous training to handle and cook each cut with precision.

In a city like Glasgow with a rich culinary scene, how does Merchant Steakhouse stand out, and what role do you think you play in maintaining that distinctiveness?

Daryl: Glasgow’s culinary scene is indeed vibrant, and we embrace that diversity. What sets us apart is not just the quality of our steaks but the overall experience we offer. From the moment guests step through our doors, we want them to feel a sense of warmth and anticipation. It’s not just about the food; it’s about creating an atmosphere that complements the exceptional flavours on their plates.

Managing operations in a high-profile steakhouse must come with its challenges. How do you ensure a smooth and seamless dining experience for your guests?

Daryl: Communication is key. We have a dedicated and passionate team that works cohesively. Regular training sessions, open lines of communication, and a commitment to continuous improvement are the pillars of our operations. From the kitchen to the front of house, everyone plays a crucial role, and we work as a tight-knit unit to ensure our guests have a flawless experience.

As the Operations Manager, what is the one thing you hope guests take away from their experience at The Merchant Steakhouse?

Daryl: I want our guests to leave with more than just a satisfied appetite. I hope they take away a memorable experience—one that lingers in their minds and beckons them to return.
